this sushi experiment was inspired by a friend who commented on my homemade valentine’s day sushi dinner. she has a fervent distaste for mushrooms (something i don’t understand!), so i tried using miso-ginger glazed young coconut meat filets in place of the miso-ginger shiitakes. very happy with the results.
miso-ginger young coconut filets, cauliflower rice, avocado, carrot, scallion, cucumber, sunflower greens, black sesame seeds. tamari & wasabi.
the miso-ginger glaze was tamari, mellow white miso, fresh ginger, fresh garlic, dried onion, lemon, & olive oil.
